NUTRITION FOR GOOD HEALTH Monounsaturated fatty acids (MUFA) have positive effects on insulin sensitivity and cardiovascular risk factors. Compiled data indicate beneficial effects of a high - MUFA diet ( ranging from 12 to 30 % of total energy intake) on metabolic and cardiovascular risk factors in metabolic syndrome and glycemic control in type 2 diabetes. Dietary sources of MUFA include nuts and vegetables oils such as olive, canola, and high oleic safflower oils. The studies further indicate that in addition to a relatively high intake of MUFA, saturated fats and trans fat intake need to be kept to a minimum of 5 % of total energy to maximize benefits.
