Banana Chia Seed Pudding Recipe
Serving Size: 1 (~250 calories)
1 banana, peeled
2 tablespoons raw chia seeds
1/2 cup water
1 teaspoon good vanilla extract
1/2 tablespoon good maple syrup (or good honey)
dash of good almond milk (optional)

Chia seeds : Chia seeds are rich in fiber and Omega-3 fatty acids. Omega-3 fatty acids are believed to support healthy skin, hair and joints. In addition, Omega-3s are valued for their ability to fight heart disease, support a healthy immune system and help protect against abnormal blood clotting. Chia seeds are also believed to be useful in the fight against depression.
In a blender, combine water, half of the banana, chia seeds, vanilla and maple syrup. Then pour into a bowl and allow to thicken on your counter or in your refrigerator for 15-30 minutes. The longer you leave the chia pudding, the thicker it will become. Once your pudding has had time to set, top it with the remaining banana (thinly sliced). Enjoy!
