Sharing the recipe for a Vitamin A rich , warm soup for the winter !

Carrot & Lentil Soup
Ingredients:
1 cup carrots, chopped
1/2 cup lentils soaked for 4 – 5 hours (red or golden lentil)
6 pepper corns

1/4 cup onions, sliced
1 clove garlic
1/4 cup chopped tomatoes
3/4 cup skim milk
1/ 2 tsp olive oilMethod: Heat oil, add pepper corns, onion and garlic and saute till onions are soft. Add chopped carrots, tomato and saute till carrots are cooked. Add lentils, water and boil till tender. Cool and puree. Transfer to a pan, add skim milk, water, salt and pepper, give one boil.
